Raw salmon and tuna in a spicy-mayo marinade over sushi rice, loaded with avocado, edamame, mango, beetroot and carrot, with nori cut over the top. Use sushi-grade fish, keep everything cold since it’s served raw, and skip raw fish if you are pregnant, immunocompromised, very young or elderly — swap in cooked salmon instead.

The nori is a small thing doing real work. It is the only sea vegetable in the whole collection and about the only everyday source of iodine that isn’t iodised salt — and nori is specifically the one to reach for, because kombu carries roughly a hundred times the iodine per gram, which is far too much to be eating on a weeknight.

The two fish keep the protein high, so nothing else has to. That leaves plenty to play with: the rice carries most of the carbs, the avocado most of the fat, and the mango and beetroot add sugars that are easy to dial back — so a lighter bowl trims around the fish rather than through it.

Method

  1. Whisk the soy sauce, light mayonnaise, sriracha, sesame oil and rice vinegar into a marinade, then gently fold through the cubed salmon and tuna and let it sit for 10 minutes.
  2. Divide the warm sushi rice between two bowls.
  3. Arrange the marinated fish over the rice with the avocado, edamame, mango, beetroot and carrot.
  4. Spoon over any leftover marinade, scatter with the spring onions and nori, and serve straight away — cut the nori at the last moment, since it goes limp within a minute of meeting the wet rice.
