The green side that earns its place: beans cooked hot enough to blister, garlic sliced instead of minced so it goes sweet not bitter, and almonds for crunch. Ten minutes, one pan.

Ingredients
- 400 g green beans, trimmed
- 2 tbsp olive oil
- 2 garlic cloves, thinly sliced
- 30 g flaked almonds
- 1/2 lemon, zested
- salt and black pepper
Method
- Toast the flaked almonds in a dry pan over medium heat until golden, then tip out and set aside.
- Add the olive oil and green beans to the pan and cook over medium-high heat for 5-6 minutes until blistered but still snappy.
- Add the garlic and cook one more minute until golden and fragrant.
- Season, scatter over the almonds and lemon zest, and serve.
