Cottage cheese is quietly one of the best protein-per-calorie foods in the supermarket, and on hot crunchy toast it stops feeling like a bodybuilder cliché and starts feeling like lunch. The tomatoes and chilli keep it fresh; the olive oil makes it taste finished.
The bread is the part to play with — one thick slice instead of two keeps the protein and halves the carbs — and the protein goes higher still with a bigger spoon of curds without changing what the plate is.
Ingredients
- 2 slices wholegrain bread (about 80 g)
- 150 g cottage cheese
- 100 g cherry tomatoes, halved
- 1 tsp olive oil
- 1 tbsp chopped chives
- 1 pinch chilli flakes
- salt and black pepper
Method
- Toast the bread until golden and crisp.
- Spread the cottage cheese thickly over both slices.
- Top with the halved cherry tomatoes, drizzle with the olive oil and season with salt and pepper.
- Finish with the chives and a pinch of chilli flakes.
