A proper hand-held plate — protein, carbs and veg all wrapped in one — which makes it a good example of a “complete meal” — it needs nothing alongside it.
There is a lot to play with here: the fat in the mince, the amount of cheese, and the tortilla-and-rice carb load. Swap to a smaller or wholemeal tortilla, lean mince and lighter cheese and the plate turns into a much lighter meal — without dropping a comfort-food favourite from the menu.
Ingredients
For the beef
- 500 g lean beef mince (10% fat)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 tbsp fajita seasoning
To assemble
- 4 large flour tortillas
- 250 g cooked rice
- 400 g drained canned black beans
- 80 g cheddar cheese, grated
- 100 g salsa
Method
- Heat the oil in a pan and soften the onion and garlic, then add the beef mince and cook until browned.
- Stir in the fajita seasoning and a splash of water and simmer for a couple of minutes until coated and glossy.
- Warm the tortillas, then down the centre of each layer the rice, black beans, seasoned beef, cheese and salsa.
- Fold in the sides and roll up tightly. Optionally toast the seam-side down in a dry pan to seal.
